Yes, there is a real Avocado kick going on over here right now. I have a zillion more ways to stuff an avocado in my head, so that post will be coming soon! For now, let's talk about Salsa. I'll take the dance, or the food anyday.
Since this is a food blog though, let's put our skirts down for a minute. I love that you can spice salsa up as high as you want, and mix it with almost anything. Today we are going to stuff some holes with it. In avocados, really people. This is a family blog. This is a perfect side dish, snack, or lunch. While directions are for baking it, this could easily be taken in a lunch box and eaten cold.
- 2 Avocados
- 4 oz salsa
- Shredded cheese (optional)
- Preheat oven to 350 degrees
- Cut avocados in half, remove pit
- Stuff avocados with salsa and top with cheese if desired
- Cook for 15 minutes
