Paleo MeatballsI really had no idea what I was getting into when I married into an Italian family. I come from a rather large family myself, being the oldest of 7, my mother is the 2nd of 11, I have more cousins than the average person has birthdays. We are all loud, and most of us are obnoxious. But Italians, wow. Everything is centered around food, and thank goodness! I had no idea what life was about until I was introduced to Italian family gatherings. I actually went into labor at one, two months early, that's how intense they are when eating together.

This is an old family recipe, the meatballs from one side of the family, the sauce from the other. Warning, this recipe makes a TON meatballs. We make this and freeze several batches for future meals. It's perfect for when you are expecting a lot of company.

  • 3 lbs ground meat
  • 3 eggs
  • ¼ cup almond meal/flour
  • 4 cloves garlic
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • 2 tablespoons oregano
  • 2 tablespoons basil
  • 1 cup parmesan cheese - optional
  1. Preheat oven to 350 degrees
  2. Mix all ingredients
  3. Roll into meatballs
  4. Bake for 30 minutes
