I am not a breakfast person, and cereal just makes me want to cringe. So coming up with breakfast options for the kids has always been a challenge for me. I'm also not a morning person, so cooking a hot meal at the crack of dawn is just not on my to do list. Yet, I want my kids to have a nutritious breakfast. What's a girl to do?
I try to make things ahead of time and freeze them, like our French toast, but let's face it, sometimes I've cooked enough. This Paleo cereal is the perfect compromise. It involves ZERO cooking, it can be made to each persons liking, and frankly, the kids can put it together themselves, while I'm blissfully asleep.
This recipe is a jumping off point! Make it your own by using your favorite nuts and fruits. We use a mix of fresh and dried fruits for added crunch and flavor.
- 1 cup frozen blueberries (we use fresh but freeze for added texture)
- 1 cup sliced strawberries
- ½ cup walnuts
- ½ cup pecans
- ½ cup coconut flakes
- Coconut milk or almond milk
- Combine all dry ingredients
- Serve ¾ cup of cereal with your choice of milk
