General Tso's Cauliflower

Ingredients
  • Cauliflower (or chicken) in bite size pieces
  • COATING
  • 1 egg
  • ½ cup tapioca flour
  • 3 tablespoons coconut aminos
  • 1 teaspoon favorite oil
  • Oil for frying
  • SAUCE
  • 1 cup beef broth
  • ¼ cup coconut aminos
  • ¼ cup palm sugar
  • 2 teaspoons minced garlic
  • 2 teaspoons ginger
  • 3 tablespoons tapioca flour (or non-GMO corn starch)
  • 1 teaspoon Sriracha sauce - optional
Instructions
  1. Preheat oven to 350 degrees
  2. Combine ingredients for coating and mix your cauliflower or chicken in the bowl until completely covered. If the coating is too thick to stir, add a teaspoon of water.
  3. In a large skillet add oil, on medium-high heat, fry the cauliflower or chicken until browned and crispy on the outside
  4. Place cauliflower or chicken on cookie sheet and place in oven while you make the sauce
  5. In a small sauce pan add all ingredients for the sauce and stir
  6. Heat over medium until slightly boiling, then reduce to a simmer, stirring frequently until thickened, 10-15 minutes
  7. Place cauliflower or chicken in a large bowl and pour sauce over it, mix until covered and serve (you can add any steamed veggies at this point)
